Gluten Free Tabbouleh with Cauliflower Couscous Recipe

Tabbouleh is a traditional very healthy Lebanese salad made with bulgur wheat, herbs, chopped veggies, olive oil, and lemon juice.

Here you have a different version of this famous dish, in case you are on a gluten-free, low-starch diet, or you just want to try something different. This creation replaces blugur wheat with cauliflower, and your family or friends will probably not be able to figure out what is made of!

It is also a funny way to introduce more veggies in your diet, and to have fun doing things differently sometimes, getting out of your routine!

Gluten Free Tabbouleh with Cauliflower CousCous Recipe

Preparation time: 10 minutes

1/2 medium cauliflower, coarsely chopped

5 tbsp extra virgin olive oil

1 cup parsley eaves

1 cup mint leaves

2 scallions sliced

1 garlic clove, coarsley chopped

1 tsp finely grated lemon zest

3 tbsp fresh lemon juice

1/2 medium cucumber cut into pieces

6 ounces cherry tomatoes cut into pieces

1 tsp salt

1. Grate the cauliflower with the coarse grater disk on a food processor or the largest holes on a box grater until rice-like texture.

2. Add in bowl, and put in the microwave for 3 minutes.

3. Then, you can combine it with the rest of ingredients. Simple!
